My favorite food site is 101 Cookbooks. In Heidi’s February list of Favorites she made reference to an Artichoke Tart. Luisa Weiss, The Wednesday Chef, wrote about Marie Speck’s Artichoke Tart with Polenta Crust. The recipe is from Marie’s cookbook, Ancient Grains for Modern Meals.  The tart sounded way to good to pass up.

You prepare a polenta crust from polenta, vegetable broth, parmesan, salt, pepper and egg. Add to the crust artichoke hearts and goat cheese.

Mix together plain Greek yogurt, herbs and spices, eggs, and scallions. Poor this mixture over the polenta, artichoke hearts and goat cheese. Add a little more parmesan. Bake.

I can’t tell you how simple and how delicious this is. I will be making it again very soon and I will be looking for a copy of this cook book.
